This is an improved version of brinjal rice because it contain spinach, which make this a healthy and nutritional lunch or dinner recipe. Brinjal have bacteria inside the pulp, so it require to check carefully while cutting it and sort the good one.
As you cut the brinjal it turn brown because of the oxygen exposure to enzyme called polyphenol oxidase in brinjal. Therfore, some people prevent it by adding in water and also some use salt water.
Ingredients for Brinjal Fry
Brinjal or EggPlants 2-3 large
Red Chilli powder 1 tsp
Turmeric 1 tsp
Black pepper 1/2 tsp
Coriander powder 1/2 tsp
Kasuri methi 1 tsp
Maggie Masala 1 tsp
Ginger and Garlic paste 1 tsp
Salt
Method
Cut the brinjal in round slices.
Sprinkle all ingredients and mix well and keep for 15 minutes
Let it get marinated and absorb all spices.
Than shallow fry brinjal or bake with 1 tbsp ghee or oil if you have oven till brinjal get cooked and turn slight crisp.

- Spinach 3-4 leaves
- Green Chillies 3-4
- Ginger paste 1 tsp
- Garlic paste 1 tsp

- Garam masala 1 tsp
- Dry mint 1 tsp
- Kasuri methi
- Salt
- Oil or Ghee 2 tbsp

Cut the brinjal in dice shape.
