Biryani Ingredients

Finely chop 1 large onion and deep fry and keep aside which is called birista.

For the Beef Pre Cooking

1 lb (450g) beef, cut into cubes
2 tbsp ginger-garlic paste
1 tsp turmeric powder
1 tsp ground coriander
Salt to taste
2 tsp oil

Rice Cooking

2 cup basmati ric
1-2 pandon leaves
black pepper 4-5
cinammon stick 1
salt
Water (adjust according to rice quantity)

Biryani Gravy Ingredients

Pre Cooked Beef
Onion 1 large
Tomato 2 large
Green Chillies 5 - 6 (depending on taste you like)
2 tbsp yogurt
1 tsp garam masala
1 tsp kasuri methi
1 star anees
2 strands of javitri
1 Pandon leaf
1 tbsp Pudina
2 tsp ghee
2 tbs cooking oil


Instructions

  1. Cook Beef with all above given ingredients and take 5 - 6 whistle in pressure cooker.

  2. Cook the Rice: Rinse the basmati rice under cold water until the water runs clear. In a large pot, bring 4 cups of water to a boil, add a pinch of salt, add pandon leaves, cinamon stick, black pepper and cook the rice until 80% done. Drain and set aside.

  3. Prepare the Beef Gravy: Heat ghee or oil in a large pan over medium heat. Add cooked Beef, onion, tomato, green chillies paste, garam masala, kasuri methi, pandon leaf, star anees, javitri, and cook for 15 minutes. Then add 2 tbsp curd and 1 lemon juice and cook for another 15 minutes on medium flame.

  4. Now add some fresh mint (pudina) and mix rice gently in gravey. Add Ghee and some water.

  5. Dum Cooking: Cover the pot with a tight-fitting lid and cook on low heat for 15 - 20 minutes to allow the flavors to meld. This step is crucial for the perfect biryani.

  6. Serve: Garnish with fresh coriander and friend onion. Gently fluff the biryani with a fork before serving. Enjoy with raita or a simple salad.



Tips for Perfect Biryani

  • Soaking Rice: Soaking basmati rice for at least 30 minutes helps in achieving a fluffy texture.
  • Ghee vs. Oil: Ghee adds a richer flavor, but vegetable oil works well too.
  • Adjusting Spice Levels: Modify the amount of green chilies based on your spice preference.
