Making simple twist with brinjal/egg plant recipe can give you amazing and delicious taste. Often brinjal is considered as boring recipe to eat. This is twisted recipe of Turkish Eggplant Casserole with Tomatoes. It is prepared in oven at 350 degrees F. Check out below i have cooked without oven in a normal way. It is a tasty recipe to include in dinner time.
Roast the brinjal till it become tender.
Add oil and cook all the cumin, onion, tomato, chillies.
Add ginger, garlic paste, turmeric, red chillies, garam masala, coriander powder salt. Cook on low flame for 5 minutes.
Add amchur powder, and some chat masala and kasuri methi. Let it become gravey and add one teaspoon ghee. Cook for 10 minutes on low flame.
Add the roasted brinjal chips in gravy and cook for 15- 20 minutes. Add some water. Make sure the brinjal chips get all the masal taste. Garnish with seasam seeds.
Ingredients
- Eggplant 4-5 (According to people you want serve)
- Sea salt
- Cooking oil/Olive oil 2 tablespoon
- 1 onion, diced
- 2 large garlic cloves, minced
- 1/4 teaspoon red chili flakes or red chillie powder
- One diced tomatoes
- 2 tablespoons finely chopped fresh parsley or coriander
- 1 teaspoon garlic
- 1 teaspoon ginger
- 1 teaspoon coriander powder
- 1 teaspoon garam masala
- 1 teaspoon dry mango powder
- 1 teaspoon kasuri methi
- 1 green chilli
- 1 teaspoon Cuminseed
- 1/2 chat masala
- Salt
- 1 teaspoon Ghee
- Sesame seed
How to make?
Wash the brinjal and cut in oval shape. Put in water to prevent getting black.
Roast the chips of brinjal using one teaspoon oil.Roast the brinjal till it become tender.
