For the Salad:

1 tin chickpeas

1 cup diced cucumber

1 cup diced tomato

1/4 cup diced red bell pepper

1 small red onion or shallot, finely chopped

4 green olives, pitted and finely chopped

4 Kalamata or black olives, pitted and finely chopped

2 Tbsp chopped parsley

100g paneer, cut into 2 cm cubes

½ tsp salt

½ tsp paprika

1 Tbsp olive oil

½ tsp salt or add as required

¼ tsp dried thyme

¼ tsp dried basil

¼ tsp oregano

½ tsp minced garlic – optional


Instructions:

Prepare the Chickpea Salad:

Drain the chickpeas and place them in a bowl.

Finely chop the onion and add it to the chickpeas.

Cut the bell pepper into small cubes and add to the chickpeas.

Add the chopped cucumber, tomato, olives, lemon juice & zest, the oil, and parsley. Season to taste and toss well. Set aside1.
