Pulao is an easy rice recipe full of vegetables and spices. You can make very quickly. You will need chopped vegetables for this recipe. Commonly many women cut the vegetables and store in the fridge for daily life cooking. You can use that, or you can also use freshly chopped veggies.
Ingredients
- 50 gram Jeera Rice
- 1 cup beans
- 1 cup carrot
- 1 cup cabbage
- 1 Onion
- 1 Tomato
- 5 green chilies
- 1tspn garlic
- 1tspn ginger
- hand full of coriander
- 1tspn garam masala
- 1/2 coriander powder
- 1/4 black pepper
- 1 lemon
- 1/2 fenugreek powder
- 1 bay leaf
- 2 star anise
- 1/2 tsp jeera powder
- Food color (optional)
- 2 tbsp Cooking Oil
- Salt
Method:
- Finely chop the vegetables and onion.
- Grind the tomatoes, green chilies, ginger, garlic and coriander.
- If you are using potato and cauliflower or cabbage then boil it before using.
- In a pan start cooking jeera rice on medium flame.
- On other side prepare the pulao gravity.
- In a wide pan add 2tbsp oil and stir chopped onion for 2 minutes.
- Then add garam masala, bay leaf, star anise, fenugreek powder, black pepper, coriander powder and jeera powder. Cook this for 5 minutes.
- Then add grinded paste of tomato, green chilies, ginger and garlic and salt and a half glass of water. Add lemon juice and cook this for 5 minutes
- Add half vegetables in gravy and cook for 10 minutes and remaining half vegetables stir in oil for 2 minutes. You can sprinkle some salt on it. Because cooking vegetables in gravy leave its natural color.
- You need this stirred vegetables to add later to make your pulao look attractive.
- Now strain and mix the half cooked rice in pulao gravy.
- You can add the food color on any one small part of the rice which later get mixed slightly.
- Cook for 10 minutes on low flame till all rice gets cooked.
- Garnish your pulao with stirred vegetables, sliced onion, lemon and coriander and serve.
Important: Adjust the water and all ingredient according to the quantity of rice.
