Mixed vegetable and egg pancake with delicious taste. This is an easy recipe for breakfast. Its a perfect recipe for fresh vegetables and even make kids to eat vegetables. This one vegetable pancake is equal to one Indian chappati. I have used here 3 different flour to experiment the taste and it's delicious.
Ingredients For Vegetarian Pancakes
2 tbls besan2 tbls maida flour
1 tbls rice flour
1 Egg
1 cup chopped and boiled cabbage
Half cup grated carrot
Half cup spring onion
1 Small capsicum
2 Red chillies chopped
4 GarlicClovess
2 tbls Oil
1/2 turmeric
1/4 gram masala
1/4 black pepper powder
Salt
1/4 coriander powder
Lemon
How to make the vegetable pancake?
Boil chopped cabbage for 2 minutes and remove from water. Take all ingredients mentioned above and mix well. Then add 1 egg in mixture and water as required. Make a soft dough.
Take a portion and make round like shown in the image. I have made the dough little bit thick, you can also make it thin and directly place in pan with a spoon. Heat pan and add 2 tbls oil and place the vegetable pan cake. Cook it on medium flame so the all the ingredient get to cook. It will take approximately 10 minutes to get brown and well cooked.
Garnish with spring onion and sevu. Serve hot with chilli sauce.
