Mughlai Egg Paratha is made with stuffed egg. The filling for this paratha is endless you can use anything you like. The method is to close it in a way that all the four corners will meet at the center and the rest involves shallow frying it in oil or ghee.
Ingredients For Dough
- 1 Cup wheat flour or maida
- 1/4 salt
- 1 tsp oil or ghee
- half cup warm water
- 1/4 cup milk
Filling Ingredients
- 3 Egg
- 1 Onion
- 1 Tomato
- 2 Green Chillies
- Chopped coriander 1 tbsp
- Salt
- 1/4 tsp black pepper
Make a soft dough and let it rest for 15 minutes till then prepare the filling. Mix 3 eggs with all chopped onion, tomato, green chillies, coriander, salt and black pepper.
Now Make a flat circle of dough just like chapati, but make it flatter than chapati because the filling need to get cook inside the paratha. So flat dough will be easy to cook. Once you complete the making chapati like circle place on pan or tawa add 1 tsp oil on it and quickly pour the egg filling in the centre.
Now fold the roti from all side one by one. So it will become square size paratha. Cook it on medium flame. Pour 1 more tspn oil. You may experience egg filling comes out while filling the paratha so close it correctly. Cook for 5 minutes till it gets golden brown. Serve hot!
