Aloo Gobi (Potato and Cauliflower Curry):

Ingredients: Potatoes, cauliflower, onion, tomatoes, ginger, garlic, green chilies, turmeric, cumin seeds, coriander powder, garam masala, cilantro.
Instructions: Sauté cumin seeds in oil, then add chopped onion, ginger, garlic, and green chilies. Add diced potatoes and cauliflower florets, along with turmeric, coriander powder, and salt. Cook until vegetables are tender, then stir in chopped tomatoes and garam masala. Garnish with cilantro before serving.

Aloo Tikki (Potato Patties):





Ingredients: Potatoes, bread crumbs, green peas, ginger, green chilies, cumin seeds, coriander leaves, chaat masala, oil.
Instructions: Boil and mash potatoes, then mix with bread crumbs, cooked green peas, grated ginger, chopped green chilies, cumin seeds, chopped coriander leaves, and chaat masala. Shape into patties and shallow fry until golden brown. Serve with chutney or yogurt dip.

Dum Aloo (Potatoes in Spiced Tomato Gravy):

Ingredients: Baby potatoes, onion, tomatoes, ginger-garlic paste, yogurt, cream, turmeric, red chili powder, garam masala, kasuri methi, oil, cilantro.

Ingredients: Potatoes, gram flour (besan), turmeric, mustard seeds, green chilies, ginger, garlic, curry leaves, lemon juice, oil.
Instructions: Boil, peel, and mash potatoes. Temper mustard seeds, curry leaves, green chilies, ginger, and garlic in oil. Mix with mashed potatoes, salt, turmeric, and lemon juice. Shape into balls, dip in seasoned gram flour batter, and deep fry until golden brown. Serve with chutney or sauce.
