Mexican Chicken Adobo | Easy Chicken Recipe

This flavorsome Mexican Chicken Adobo is made with traditional dried chilies and seasonings to get a smoky homemade adobo sauce that you steaming your chicken in, till it’s become tender.

Adobo is Spanish for marinade or sauce, and in Mexico, an adobo regularly includes a mixture of chilies, vinegar, and spices. This version of chicken adobo is one of the easiest and fastest recipes.

In this recipe, first it need to make sauce of all ingredients and cook chicken in that sauce. They cook ingredients roughly and grind it. I have cooked all ingredients and add chicken like gravy chicken.

Mexican Chicken Recipe

Ingredients

  • Chicken Half kg
  • Onion paste 1
  • Tomato paste 1
  • Garlic 1 tsp
  • Cumin seeds powder 1/2 TSP
  • black pepper powder 1/2 TSP
  • Red chilli powder 2-3 tablespoon 
  • Thyme - substitute kasuri methi
  • Clove powder 1 tsp or garam masala
  • Apple Cider vinegar 1 TSP or substitute 1 lemon juice
  • Mexico Oregano 1 TSP
  • Olive oil 1 tablespoon
  • Cooking oil 2 tablespoon
  • Low sodium chicken broth or water half glass
  • bay leaves 2
  • salt

How to cook?

  • If you like, you can use only olive oil. I have used olive oil and normal cooking oil (sunflower oil).
  • In a pan add olive oil, and cooking oil and cook onion paste, tomato paste, garlic, red chili powder, Cumin seeds powder, black pepper powder, Mexico Oregano and salt.
  • Add bay leaf.
  • This dish needs Thyme, I have used Kasuri methi as a substitute. 
  • Cook for 10 minutes and add raw chicken.
  • Cook on medium flame till the chicken gets all the flavors.
  • If you have Apple Cider vinegar 1 TSP. I have used lemon.
  • Garnish with spring onion.

"Chongay" is a sweet dessert that is made during the month of  Muharram . I have seen from childhood everyone prepare this recipe during Muharram. But I didn't find the exact story of it. Let it cool down, sprinkle the powdered sugar over chonga and server it.
