Sabudana vada, also known as 'sago vada', is a popular deep fried snack from Maharashtra, India. It is usually served with spicy green chilies chutney along with tea.

- 4 large potato boiled, peeled and mashed
- 1/2 cup sabudana (sago)
- 2 Green chilies chopped very fine
- 1/4 cup peanuts roasted and crushed coarsely
- 1 tsp cumin seeds
- salt
- lemon juice
- flour
Method:
Boil potato and mash it. Take a bowl add mashes potato, chopped green chilies, crushed peanuts, cumin seeds, lemon juice, salt and 1 teaspoon corn flour. Mix everything well. Make equal parts, round it and press lightly with both hands.
Deep fry vada on medium heat till it gets brown and serves with green chutney or chilies sauce.
