This is a long variety of eggplant. This spicy eggplant/Brinjal stir fry is an easy, flavorful side dish that is best for lunch/dinner. Flash or shock fry pan the eggplant just to get them soft. Then, stir fry the eggplant in a spicy sauce.
Ingredients
- 1 pound Asian eggplant (454g), (see note 1)
- 3/4 cup canola oil, or any neutral oil
- 1/2 cup water
- 1 teaspoon cornstarch
- 1 teaspoon minced garlic
- 1 teaspoon minced ginger
- 2 tablespoons Sweet and Spicy Sauce
- 1 teaspoon black pepper- ground
- 1 teaspoons red chili flakes, depending on your desired level of spice
- 1 teaspoons brown sugar
- salt
- Spring onion 1 tablespoon
- Spring onion for garnish
- toasted sesame seeds for garnish
